4 large Portobello mushroom caps, stems removed

¼ cup balsamic vinegar

3 tablespoons olive oil

2 garlic cloves, finely minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and freshly cracked black pepper to taste

4 whole-grain or brioche burger buns, halved

4 slices of fresh mozzarella cheese

1 cup fresh spinach or arugula

1 large ripe tomato, sliced into rounds

½ avocado, sliced

Optional: homemade or store-bought pesto or aioli for spreading

Marinate the Mushrooms: In a shallow dish, combine the balsamic vinegar, olive oil, minced garlic, dried thyme, dried oregano, and a pinch of salt and pepper. Mix well. Place the Portobello caps into the marinade, ensuring they are evenly coated. Allow them to marinate for at least 30 minutes, flipping them halfway through to absorb the flavors fully.

    Preheat the Grill: Heat your grill or grill pan on medium-high heat. If you're using a grill pan, brush it lightly with olive oil to prevent sticking.

      Grill the Mushrooms: Remove the mushrooms from the marinade, letting any excess liquid drip off. Arrange the mushrooms on the grill, gill-side down. Grill for approximately 5-6 minutes, then flip and grill for an additional 5 minutes, or until they are tender and have a nice char. In the last minute of grilling, place a slice of mozzarella on each mushroom cap, allowing it to melt beautifully.
