    Prepare the Vegetables: In a large mixing bowl, combine the thinly sliced zucchinis and tomatoes. Generously sprinkle with salt and freshly ground black pepper.       Make the Garlic Oil: Within a small skillet, heat the extra virgin olive oil over medium heat. Once the oil is warm, add the minced garlic.
