Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

2 tsp pumpkin pie spice (plus additional for dusting)

½ cup granulated sugar

¼ cup packed brown sugar

½ cup canned pumpkin puree

1 large egg

½ cup buttermilk (alternatively, use milk with 1 tsp vinegar added)

¼ cup vegetable oil

1 tsp vanilla extract

½ cup powdered sugar (for optional glaze)

1-2 tbsp milk (for optional glaze)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare your donut pan by greasing each cavity generously with non-stick cooking spray to ensure easy release.

Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and pumpkin pie spice until evenly combined. Set this bowl aside for later use.

Cream Sugars and Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, canned pumpkin puree, and egg. Use an electric mixer on medium speed to blend these ingredients until the mixture is smooth, fluffy, and well-combined. Gradually incorporate the buttermilk, vegetable oil, and vanilla extract, mixing after each addition to ensure everything is thoroughly blended.

Combine Mixtures: Carefully add the bowl of dry ingredients to the wet mixture. With a spatula or spoon, gently fold the dry mix into the wet mixture until just combined. Be cautious not to overmix; this will keep your donuts light and airy.

Fill the Pan: Using a spoon or piping bag, fill each cavity of the donut pan with the batter, making sure to fill them about ¾ full. This allows enough space for the donuts to rise without overflowing.

Bake: Place the filled donut pan into the preheated oven and bake for 12-15 minutes. Donuts are done when a toothpick inserted into the center comes out clean. Once baked, remove the pan from the oven and allow the donuts to cool in the pan for about 5 minutes. After that, transfer them to a wire rack to cool completely.

Optional Glaze: To create a sweet glaze, mix the powdered sugar with milk in a small bowl until you achieve a smooth and pourable consistency. Once the donuts have cooled, dip the tops into the glaze or use a spoon to drizzle it on. For an added touch, sprinkle a pinch of pumpkin pie spice over the glaze.

Serve and Enjoy: Let the glaze set for a few minutes before serving. Pair these delightful pumpkin spice donuts with a steaming cup of coffee or tea, and relish the warm, cozy flavors of autumn in each delectable bite!
