Ingredients

1 cup canned pumpkin puree

4 large eggs

1 cup milk (or a non-dairy alternative, like almond or oat milk)

1/4 cup pure maple syrup

1 teaspoon vanilla extract

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

8 slices of thick-cut bread (brioche or challah recommended)

1/2 cup walnuts or pecans (chopped, optional)

Powdered sugar (for garnish, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by greasing it with butter or a non-stick cooking spray to prevent sticking.

Prepare the Mixture: In a large mixing bowl, combine the canned pumpkin puree, eggs, milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, ground ginger, and salt. Whisk everything together vigorously until the mixture is completely smooth and nicely blended.

Arrange the Bread: Take each slice of bread and cut it into quarters or cubes, then layer them evenly across the bottom of the greased baking dish. If you’re using nuts, sprinkle the chopped walnuts or pecans over the bread for added texture and flavor.

Combine and Soak: Carefully pour the pumpkin mixture over the arranged bread, making sure to evenly distribute it so that each piece of bread gets soaked. Gently use a spatula to press down on the bread, encouraging it to absorb the custard mixture thoroughly.

Baking Time: Cover the baking dish tightly with aluminum foil and allow it to sit at room temperature for about 15 minutes, giving the bread a chance to soak up the liquid. After soaking, remove the foil and transfer the dish to your preheated oven. Bake for 30-35 minutes, or until the top is golden brown and the custard is set in the center.

Serve: Once freshly baked, remove the dish from the oven and let it cool for a few minutes. Cut into squares while still warm and serve, optionally garnished with a light dusting of powdered sugar for a touch of sweetness.

Enjoy: For an extra special touch, pair your Baked Pumpkin French Toast Squares with additional maple syrup or a dollop of whipped cream—perfect for a cozy breakfast or delightful brunch!
