4 medium Yukon Gold potatoes

200g block of feta cheese

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves or parsley for garnish

Optional: Red pepper flakes for an extra spicy kick

Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking.

    Prepare the Potatoes: Rinse the Yukon Gold potatoes under cold water to remove any dirt. Using a fork, prick each potato multiple times all over—this step is crucial as it allows steam to escape while baking. Arrange the potatoes directly on the oven rack and bake for approximately 45-60 minutes, or until soft when punctured with a fork.

      Prepare the Feta Cheese: In the meantime, grab a medium-sized baking dish and pour 1 tablespoon of olive oil into it, spreading it evenly over the bottom. Center the block of feta cheese in the dish.
