Ingredients

1 lb ground chicken

1 cup Italian-seasoned breadcrumbs

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/4 cup fresh parsley, chopped (or 2 tablespoons dried parsley)

2 cloves garlic, finely minced

1 large egg

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for a hint of heat)

Salt and black pepper to taste

1 jar (24 oz) marinara sauce

Additional grated Parmesan cheese for topping

Fresh basil leaves (optional, for garnish)

Instructions

Preheat the Oven: Set your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with cooking spray or oil.

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground chicken, Italian breadcrumbs, grated Parmesan, shredded mozzarella, chopped parsley, minced garlic, the egg, dried oregano, red pepper flakes (if using), and salt and pepper. Gently mix the ingredients until just combined; avoid overmixing to maintain the tenderness of the meatballs.

Shape the Meatballs: With damp hands (to prevent sticking), scoop out portions of the mixture and roll them into meatballs about 1 to 1.5 inches in diameter. Arrange the rolled meatballs on the prepared baking sheet, ensuring they are spaced evenly apart.

Bake the Meatballs: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are golden brown and have reached an internal temperature of 165°F (74°C).

Heat the Marinara Sauce: While the meatballs are baking, pour the marinara sauce into a saucepan and warm it over medium heat. Stir occasionally until it is heated through, and taste to adjust the seasoning if needed.

Combine Meatballs and Sauce: Once the meatballs are fully cooked, carefully transfer them to a large baking dish. Pour the warmed marinara sauce over the meatballs, ensuring each one is generously coated.

Add Cheese Topping: Sprinkle a layer of extra grated Parmesan and additional shredded mozzarella cheese over the meatballs, covering them evenly.

Final Baking: Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted, bubbling, and slightly golden.

Serve: Remove from the oven and allow the dish to cool for a couple of minutes. If desired, garnish with fresh basil leaves. These meatballs are delicious served over spaghetti, nestled in a sub roll, or as a tasty appetizer with toothpicks for easy handling!
