1 lb boneless, skinless chicken breast, cut into bite-sized cubes

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup zucchini, diced

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

1 teaspoon smoked paprika (for a deeper flavor)

1 teaspoon Italian seasoning

Salt and black pepper, to taste

¼ cup chicken broth (low-sodium preferred)

½ cup shredded mozzarella cheese

Fresh parsley, chopped for garnish

Sauté the Chicken: Heat the olive oil in a large skillet over medium heat. Add the cubed chicken breast to the skillet, and season with salt, black pepper, and smoked paprika.
