4 large spinach tortillas or wraps

1 ripe avocado, mashed to a creamy consistency

8 slices of crispy bacon, cooked until golden and drained on paper towels

2 cups fresh baby spinach leaves, washed and dried

1 large ripe tomato, sliced into thin rounds

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon fresh lemon juice

Salt and freshly ground black pepper to taste

Optional: Pinch of red pepper flakes for a spicy kick
