1 cup rolled oats

1 cup whole wheat flour

1/2 cup packed brown sugar

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 cup unsweetened applesauce

1/2 cup milk (or milk alternative)

1/4 cup vegetable oil (or melted coconut oil)

2 large eggs

1 cup diced apples (approximately 1 medium apple, peeled and cored)

1/2 cup chopped nuts (walnuts or pecans, optional)

1/4 cup raisins or dried cranberries (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, add the rolled oats, whole wheat flour, packed brown sugar, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Use a whisk to thoroughly combine all the ingredients, ensuring there are no clumps.

      Mix Wet Ingredients: In a separate bowl, combine the unsweetened applesauce, milk, vegetable oil, and eggs. Whisk the mixture until it is smooth and all the ingredients are well-blended.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry mixture. Gently mix with a spatula or wooden spoon until just combined; it’s important not to overmix to keep the muffins tender.
