For the loaf:

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

2 teaspoons ground cinnamon

½ cup unsalted butter, softened to room temperature

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp for their tartness)

For the cinnamon swirl:

1 tablespoon ground cinnamon

¼ cup packed brown sugar

For the glaze (optional):

1 cup powdered sugar

2-3 tablespoons milk or water (adjust for desired consistency)

½ teaspoon vanilla extract

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it with butter or spraying it with non-stick spray. For easier removal, you may also line the pan with parchment paper, leaving some overhang.

      Mix Dry Ingredients:

        In a medium mixing bowl, sift together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Whisk until well combined, then set the bowl aside.

          Cream Butter and Sugar:

            In a large mixing bowl, use an electric mixer on medium speed to cream together the softened butter and granulated sugar. Beat the mixture for about 3-4 minutes until it is light, fluffy, and pale in color.

              Add Eggs and Vanilla:

                Add the eggs to the butter and sugar mixture one at a time, beating well after each addition to ensure they are fully incorporated. Stir in the vanilla extract until evenly blended.

                  Incorporate Dry Ingredients:

                    Gradually add the sifted dry ingredients to the wet batter, alternating with the buttermilk. Start and finish with the dry ingredients (dry-wet-dry), mixing gently until just combined. Avoid over-mixing to keep the loaf tender.

                      Fold in Apples:

                        Carefully fold the diced apples into the batter using a spatula or wooden spoon, ensuring the apples are evenly distributed throughout.

                          Prepare Cinnamon Swirl:

                            In a separate small bowl, mix the ground cinnamon with the packed brown sugar until well combined. Set aside for layering.

                              Layer the Batter:

                                Pour half of the batter into the bottom of the prepared loaf pan. Evenly sprinkle half of the cinnamon sugar mixture over the batter. Spoon the remaining batter on top and finish with the rest of the cinnamon swirl mixture. Using a butter knife or skewer, gently swirl the mixtures together for a beautiful marbled effect.

                                  Bake:

                                    Place the loaf pan in the preheated oven and bake for 50-60 minutes. The loaf is done when a toothpick inserted into the center comes out clean. If the top begins to brown too much, lightly cover it with aluminum foil during the last 15 minutes of baking.
