2 large eggs

2 tablespoons melted coconut oil (or unsalted butter)

2 medium apples, peeled, cored, and diced (approximately 2 cups)

1/2 cup chopped walnuts (optional for added crunch)

1/4 cup raisins or dried cranberries (optional for sweetness)

Extra cinnamon and maple syrup for drizzling if desired

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). While the oven is heating, lightly grease a 9x9-inch baking dish with cooking spray or a small amount of oil to prevent sticking.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Use a whisk or spoon to stir the mixture thoroughly, ensuring the baking powder is evenly distributed throughout the oats.
