1 teaspoon ground cinnamon

1 tablespoon freshly squeezed lemon juice

½ teaspoon pure vanilla extract

For the cheesecake layer:

16 oz cream cheese, softened to room temperature

¾ cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

½ cup sour cream

1 teaspoon lemon zest

For topping:

1 teaspoon ground cinnamon

1 tablespoon granulated sugar

Chopped walnuts or pecans (optional, for added crunch)

Prepare the crust: Preheat your oven to 325°F (160°C). In a medium mixing bowl, combine the graham cracker crumbs, melted butter, 2 tablespoons of granulated sugar, and 1 teaspoon of ground cinnamon. Stir until the crumbs are evenly moistened. Firmly press this mixture into the bottom of a lined 9x9-inch baking pan to create an even crust. Bake for 10 minutes, then remove from the oven and let it cool completely.

    Prepare the apple filling: In a medium-sized bowl, toss the diced Granny Smith apples with brown sugar, 1 teaspoon of ground cinnamon, lemon juice, and vanilla extract. Mix until the apples are well coated, and set aside for a few minutes to allow the flavors to meld.

      Make the cheesecake layer: In a large mixing bowl, use an electric mixer to beat the softened cream cheese and ¾ cup of granulated sugar together until smooth and creamy, about 2-3 minutes.
