2 cups cooked jasmine rice (preferably day-old to avoid clumping)

1 cup large shrimp, peeled and deveined

1 cup frozen peas, thawed

2 tablespoons vegetable oil

2 large eggs, lightly beaten

3 green onions, thinly sliced (reserve some for garnish)

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for added depth)

1 teaspoon sesame oil

Salt and pepper, to taste

Lime wedges, for serving (optional for freshness)

Prep the Ingredients: If not already done, cook the jasmine rice and allow it to cool. Day-old rice is preferable as it maintains its texture when stir-fried. To thaw the peas, place them in a bowl of warm water for a few minutes and then drain.

    Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the peeled and deveined shrimp to the skillet, seasoning lightly with salt and pepper. Sauté for 2-3 minutes, or until the shrimp turn pink and opaque. Once cooked, remove the shrimp from the skillet and set aside.
