1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust according to heat preference)

1/2 cup chicken broth (or vegetable broth for a vegetarian option)

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Juice of 1 lemon

Freshly grated Parmesan cheese, for serving

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to the package directions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and set it aside.

    Sauté the Shrimp: In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the peeled and deveined shrimp to the skillet. Season with salt and pepper. Cook the shrimp for about 2-3 minutes on each side, or until they are pink and fully cooked. Once done, remove the shrimp from the skillet and set them aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Allow it to melt, then add the minced garlic and red pepper flakes. Sauté the mixture for approximately 1 minute or until fragrant, being careful not to let the garlic brown.

        Combine Ingredients: Pour in the chicken broth (or vegetable broth) and add the halved cherry tomatoes to the skillet. Stir the mixture and bring it to a gentle simmer. Allow it to cook for about 2-3 minutes, letting the tomatoes soften slightly.

          Toss the Pasta: Next, add the reserved, drained pasta to the skillet, along with the cooked shrimp. Pour in a splash of the reserved pasta water (start with 1/4 cup and adjust as needed for sauce consistency) and squeeze the juice of one lemon over the top. Gently toss everything together until well combined and the pasta is evenly coated with the sauce.

            Finish and Serve: Remove the skillet from the heat. Stir in the freshly chopped parsley and adjust the seasoning with additional salt and pepper if needed. Serve the pasta warm, generously sprinkled with freshly grated Parmesan cheese for added flavor.
