1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning blend

Salt and black pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to package directions until al dente, usually about 8-10 minutes. Once cooked, reserve ½ cup of the pasta cooking water, then drain the pasta and set it aside.

    Sauté the Shrimp: In a spacious skillet heated over medium heat, pour in the olive oil. When the oil shimmers, add the shrimp, seasoning them with salt and pepper. Cook the shrimp for about 2-3 minutes on each side, or until they are rosy pink and opaque. Once done, remove the shrimp from the skillet and transfer them to a plate, keeping them warm.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for approximately 30 seconds until fragrant, ensuring it doesn’t burn. Incorporate the halved cherry tomatoes and cook for an additional 2-3 minutes, or until they just start to soften and release their juices.
