Ingredients

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

½ cup heavy cream or a non-dairy alternative for added creaminess (optional)

Fresh basil leaves for garnish

Instructions

Sauté Aromatics: In a medium-sized pot, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for approximately 3 minutes until it becomes translucent. Add the minced garlic and continue to sauté for another 30 seconds, or until the garlic is fragrant and lightly golden.

Add Tomatoes: Carefully pour the crushed tomatoes into the pot, stirring well to combine them with the sautéed onions and garlic, ensuring an even distribution of flavors.

Add Broth & Season: Pour in the vegetable broth and add the dried basil, sugar (if using), as well as salt and pepper to taste. Stir thoroughly until all ingredients are well combined.

Simmer: Increase the heat slightly to bring the soup to a gentle boil. Once boiling, reduce the heat to low and let it simmer uncovered for about 5 minutes. This allows the flavors to meld beautifully, creating a comforting soup base.

Blend (Optional): For those who prefer a smoother texture, take an immersion blender and carefully puree the soup directly in the pot until it reaches your desired consistency. Alternatively, you can transfer the soup in batches to a countertop blender for blending.

Creamy Finish: If you wish to enrich the soup’s flavor, stir in the heavy cream or your chosen non-dairy alternative. Allow the soup to heat through on low heat, being careful not to let it reach a boil to maintain the creamy texture.

Serve: Ladle the warm tomato soup into bowls, garnishing each serving with fresh basil leaves for an aromatic touch. Sit back, enjoy your quick and cozy tomato delight!
