Ingredients

1 cup quinoa, thoroughly rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (choose red or yellow for added color), diced

1/2 medium red onion, finely chopped

1 cup canned chickpeas, drained and rinsed

1/2 cup feta cheese, crumbly and fresh

1/4 cup kalamata olives, pitted and halved

1/4 cup fresh parsley, finely chopped

Zest and juice of 1 large lemon

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

Instructions

Prepare the Quinoa: In a medium saucepan, combine the rinsed quinoa and water or vegetable broth. Bring the mixture to a vigorous boil, then reduce the heat to low. Cover and let it simmer for about 15-20 minutes, or until the quinoa has absorbed all the liquid. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the quinoa with a fork and allow it to cool to room temperature.

Mix the Vegetables: While the quinoa is cooling, prepare the fresh vegetables. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, bell pepper, finely chopped red onion, and drained chickpeas. Toss them gently to ensure an even mix.

Incorporate Feta and Olives: Carefully fold in the crumbled feta cheese and halved kalamata olives into the vegetable mixture, ensuring they are evenly distributed without breaking too much of the feta.

Make the Dressing: In a small bowl, whisk together the lemon zest, freshly squeezed lemon juice, olive oil, dried oregano, and a pinch of salt and pepper until well blended and emulsified.

Combine the Ingredients: Once the quinoa has cooled to room temperature, add it to the mixing bowl with the vegetables, feta, and olives. Drizzle the dressing over the top and gently toss everything together until well combined and the salad is evenly coated.

Garnish: For a fresh finish, sprinkle the chopped parsley over the salad and give it a light stir to distribute the vibrant greenery throughout.

Serve or Store: Enjoy your delightful Mediterranean quinoa salad right away for the freshest taste, or cover and refrigerate it for about 30 minutes to allow the flavors to meld beautifully. This salad can be served chilled or at a pleasant room temperature, perfect for any occasion.
