8 oz (225g) pasta (fettuccine or penne)

2 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 can (14 oz/400g) diced tomatoes with juice

1 cup heavy cream

1 teaspoon dried oregano

Salt and freshly cracked black pepper, to taste

1 cup fresh basil leaves, roughly chopped

1/2 cup grated Parmesan cheese, plus extra for serving

Crushed red pepper flakes (optional, for added heat)

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve 1/2 cup of the pasta cooking water. Drain the pasta and set aside.

      Prepare the Sauce:

        - In a large skillet set over medium heat, add the extra virgin olive oil. Once the oil shimmers, add the minced garlic and sauté for about 30 seconds, or until fragrant, being careful not to let it brown.

          Add Tomatoes and Simmer:

            - Carefully pour in the canned diced tomatoes along with their juice. Add the dried oregano, salt, and freshly cracked black pepper. Allow the mixture to come to a gentle simmer. Cook for 5-7 minutes, stirring occasionally, until the flavors have developed and the sauce slightly thickens.

              Incorporate the Cream:

                - Lower the heat to a gentle simmer. Add the heavy cream to the tomato mixture, stirring thoroughly to combine. Let it simmer for another 3-5 minutes until the sauce thickens just a bit more.

                  Combine Pasta and Sauce:

                    - Add the cooked pasta directly into the skillet with the creamy tomato sauce. Toss the pasta in the sauce until completely coated. If the sauce appears too thick, gradually mix in some of the reserved pasta water until you reach your desired consistency.

                      Add Fresh Basil and Cheese:

                        - Remove the skillet from the heat and stir in the chopped basil and grated Parmesan cheese. Taste the dish and adjust seasoning with more salt, pepper, or crushed red pepper flakes to your preference.

                          Serve:
