Ingredients

2 salmon fillets (approximately 6 oz each)

2 cups broccoli florets

1 bell pepper (red or yellow), thinly sliced

1 medium carrot, julienned

1 cup snap peas

3 tablespoons vegetable oil (divided)

3 tablespoons teriyaki sauce (plus extra for serving)

2 cloves garlic, finely minced

1 teaspoon fresh ginger, finely minced

1 tablespoon sesame seeds (optional, for garnish)

Cooked white or brown rice, for serving

Chopped green onions, for garnish

Instructions

Prepare the Ingredients: Begin by thoroughly washing all vegetables. Cut the broccoli into florets, slice the bell pepper, and julienne the carrot. Cut the salmon fillets into bite-sized pieces for quick cooking.

Heat the Oil: In a large skillet or wok, pour in 2 tablespoons of vegetable oil and heat it over medium-high heat. Once the oil is hot, add the salmon pieces. Cook for approximately 3-4 minutes, turning occasionally, until the salmon is golden brown and cooked through. Remove the salmon from the skillet and set it aside on a plate.

Stir-Fry the Veggies: In the same skillet, add the remaining tablespoon of oil. Toss in the minced garlic and ginger, stirring for about 30 seconds until they become fragrant. Next, add the broccoli florets, sliced bell pepper, julienned carrot, and snap peas. Stir-fry these vegetables for about 5-7 minutes until they are tender yet retain some crispness.

Combine and Flavor: Carefully return the cooked salmon to the skillet with the vegetables. Drizzle the teriyaki sauce evenly over the entire mixture. Gently stir everything together for about 2-3 more minutes, allowing the salmon and vegetables to warm through and absorb the flavors of the sauce.

Serve: Plate the teriyaki salmon and veggie stir-fry over a generous serving of cooked rice. For an extra burst of flavor, drizzle additional teriyaki sauce on top. Finish off by sprinkling sesame seeds and chopped green onions for a delightful garnish.
